Paleo Fake Fried Chicken

Fried.....the word even sounds delicious. Being a Georgia girl i love everything fried. So cutting out bad oils, deep fried was out! NOOOO! What about delicious fried chicken?!!! And then it hit me! Actually, i accidently spilled the onion powder AND forgot the chicken was even in the oven, and a masterpiece was born! Now this does not have the flanky crunch of breaded fried chicken but for a girl going a year without this is the best thing! The skin is so crisp and the meat is so juicy!! Yuumm! 





So for this ill break it down to each leg, because sometimes you get 6 pack or the jumbo family size. 

Pre-Heat Oven 350' 

Each Leg: ( with the skin on it ) 

1/4 Tsp Onion Powder 
1/4 Tsp Garlic Powder 
1/8 Tsp Cayenne Powder 
1/8 Tsp Cumin Powder
Salt & Pepper 

Take your onion powder and rub over the skin, a thin layer is all you need, then ad you other spices over that. And place on a baking sheet, with a rack if possible, and bake for 1 hour. The skin is very crispy, and the meat is nice and juicy! 



Now being lactose intolerant is super no fun. I havent tried Ghee yet but im hoping it helps because butter is amazing! Lol but until then i had to come up with something  because i love mashed sweet potatoes. I thought there was no substitute good enough until a little experiment answered all my prayers! 



4 servings 

2 Sweet Potatoes 
1 TBS Coconut Oil 
1/4 Tsp Salt 
1/4 Tsp Onion Powder 
1/4 Tsp Coconut Sugar 
1/8 Tsp Garlic Powder 
Pepper 

I just peeled and diced the sweet potatoes and placed them into a pot and filled with water until it covered the potatoes. 
Boil until you can easily place a fork through then drain and get your hand mixer out and mix. I add my coconut oil and seasons at this point, i like to have the potatoes mixed then mixed again. 
Best part is the coconut oil helps give a smooth texture and seasonings are just amazing to have!

Paleo Breakfast Hash

I use to love to have breakfast just because it was a good excuse to eat bacon. Now we throw bacon on EVERYTHING! Make it rain bacon. LOL But bacon is serious in this house hold, it needs to be clean, it needs to be real, and it needs to be delicious! I dread telling my husband that the bacon is gone, wording it weird doesn't help. I have tried "the bacon is no longer residing here" or " I would not say there IS bacon....per say" but he knows, he senses it, like an alarm going off as I shove the last piece in my mouth ( I'm selfish like that ) And it seems like no matter how much bacon we buy its all gone before the week ends. That's some serious bacon consumption. NO REGRETS! lol But onto the dish of the post! Breakfast! So Breakfast use to be waffles, eggs, bacon, sausage, syrup, cereal, etc. But now this is what we dream about at night! This is amaze-balls. this we started off with another hash recipe and then over time created our own masterpiece. And she is a beaut.




This took some serious time to perfect, but don't fear, because we got it. We got it good.

Normally I make this Saturday morning since its the only time we really get before my husband rushes off to work. But we look forward to it every weekend, until the bacon runs out!!! LOL


this will probably make 3-4 portions we always have leftovers

Ingredients:

1 Sweet Potato (Good size)
1 White or Yellow Onion
1 Bell Pepper
1/2 LB Brussels Sprouts
6 pieces of BACON ( how ever many pieces you want )
4 Eggs


The first thing I do is cut the ends off of the Brussels Sprouts and slice each one into 3s then place them into my steamer for about 20 min.

Then in a large pan I cook my bacon, and while that's going I use my spiral-maker-thingy and make my sweet potato into a noodle (or just cut into small pieces and place in the steamer as well)

Once my bacon is done, I leave the bacon grease in the pan and add my chopped onions and sweet potato noodles then sauté and cover for about 10 min ( continue to move around every few min )

After the Sweet Potato has softened I add the rest of my ingredients including the brussels sprouts and mix them all together.

Some like to cook their eggs in the hash, I place all of the hash in a big bowl, and add more of my bacon grease I keep and pan fry the eggs.

The best Breakfast! I would love to hear if you would add any other ingredients!

Paleo Bacon Ranch Burger

Spring has finally came!!
We live in East Texas and it was touch and go for awhile. I love spring, everything about it, flowers bloom, smell of fresh cut grass, the grill, and the foooooood. Especially grilled food. The farmers markets here are coming up next week and I am beyond excited. The farmers here are so friendly and well knowledgeable, also we all stay in touch over the off season so its always good to see everyone again. But I don't want to take up to much time because Im really excited to share this creation of pure bliss, the Paleo Bacon Ranch Burger.

 
 
So before I do anything with this recipe I make Against all Grains Mayo recipe (in her book), it is seriously the best one I have made, but if your more into clean eating or just being healthy, its your mayo of choice.


Ranch Dressing :
By: Paleo Table

1 cup paleo mayo
1 cup canned coconut milk, shaken
1-2 Tbsp fresh dill, minced
1 tsp apple cider vinegar
Salt & Pepper to taste

this is the best paleo ranch dressing, if your sensitive to spice maybe little less of the pepper, other wise it has the perfect ranch dressing taste.



Now to the BURGER!!! :

(For each patty makes 4)

1 lb Grass fed beef, or your ground beef of choice
1 tbs Onion Powder
Generous Sea Salt & Pepper
and drizzled with olive oil coating the patty


Grill the burgers to desired "rare-ity"


And prep your toppings!
for this we used

4 Handfuls of spinach (1 for each plate)
1 whole White or Red onion sliced
2 heirloom tomatoes sliced
pickles (yumm)
8 slices of bacon ( 2 pieces each burger)

Now you can add your other fav burger toppings as well!


once all is done we stacked these babies up!
spinach, patty, drizzled our ranch dressing, added onion, tomato, pickles and bacon and whaa-la!
Paleo Bacon Ranch Burgers! This was the best burger and since its just the 2 of us great leftovers as well!
As always with beef and seasonings, if you wanted to prep the pattys in the morning or during lunch it will make the flavor jump even more! I would just wait to coat in the olive oil until grilling

Paleo Spaghetti

So I grew up around the love to cook, and the love of food. My dad has to be hands down the greatest cook! Never disappoints! And as a kid, i spent a lot of time with my Nanny, she is THE Martha Stewart of the South, she uses real food for everything! "If you cant pronounce it, you shouldn't eat it" is what she always says. And we use to make EVERYTHING from scratch. Pizza, Pasta Noodles, Sauces, the works. So everytime i make anything it always reminds of those days, standing on a step stool, covered in flour. 

So Italian is also a fav, spaghetti is of course top of the list, so being paleo grain noodles are a no-go. But Spaghetti squash is an amazing alternative, and super easy!! This recipe is basically how i cook the squash and the meatballs.....yumm! And the sauce i bought, its a non-gmo locally made sauce i got from our health food store and its pretty good, lots of flavor! 


 

You can hardly tell the difference right!? 


Makes : 4 Servings 

Time :  1 hour

Ingredients : 

1 Spaghetti Squash 
1 lb Grass Fed Ground Beef, or Ground        Beef
1 Jar of Spaghetti Sauce of choice 

(For the Meatballs) 
1 TBS Onion Powder 
1 TBS Garlic Powder 
1 Tsp Turmeric
1 Tsp Basil leaves 
1/2 Tsp Ground Cumin  
Good amounts of Salt and Pepper
1 Jalapeno Pepper (optional) 
1/2 Tsp Melted Butter ( For later) 


So first set your oven to 400' 

And cut your Spaghetti Squash vertical down the center. And place each halves face down on a baking sheet, and bake for 30-35 min.  

While your wating prep your meatballs. 
In a large bowl i combined the beef, with all ingredients and just mushed all together real good, mixing them well. Then i took another baking sheet and rolled 14 meatballs onto the tray, then i took my melted butter and a small spoon, and added 2 drops of butter to each meatball. Then placed covered in the fridge. 

Once the squash was done, i placed the oven temp down to 350' then add meatballs and cook for 30 min. 

Now take a large bowl, your spaghetti quash and a fork, rake the squash from top to bottom and you will see how the noddles are just made by themselves. After i cleaned out both shells i placed the "noodles" in a bowl in the microwave just to keep warm. 

Now i bring my sauce to simmer while im waiting for the meatballs to be done, and then make a plate!

Easy & Clean Mexican Dish

Ahhhh back to food! Mexican is my favorite, food is my favorite. 

So our couch is like the cloud nine of couches, mac daddy supreme, sink like the titanic.... Opps to soon? Lol so after work i come home, let my two boys (dogs) out and i fight. I try to go to the kitchen, maybe even reach for the broom. But alas the couch has yet again won this battle and i sit. My dogs LOVE to be outside when its sunny. So i know i have plenty of time. ( I'm doing this as we speak, and making this recipe again tonight LOL) so after my comfy fest BOOM 8 oclock. wwwhhaat. So i better make something so when the hubs comes home he thinks i was productive. lol and he gets fed! So this is the greatest most delicious, least amount of ingredients, recipe i have made. And now we drool..... 



Do you hear the Angels!? 

So this i would say maayybbee 15 min to make, ill always say maybe because as you can tell from my couch story i have no sense of "time frames" LOL 
 

So this baby

 2 good servings

2 Chicken tenders or breast 
Sea Salt & Pepper
1 Tsp Coconut Oil 

Refried Beans ( we get organic with green chiles ) <- ALL FLAVOR
1 Red Onion 
And 1 tomato. 
2 Fresno Peppers 


Now you can add your burrito favorites mmmm maybe some lettuce or cheese.

So what i did was cooked the beans on low to slowly heat while my chicken is cooking, be careful, over cooked refried beans are not so good. 
For the chicken i pan fried, i added a tsp of coconut oil to the pan and let it melt, then added my chicken and sprinkled the salt and pepper on both sides, chop your tomato and onion, and when your chicken is done slice your fresno pepper down the center, or how every you want it cut, and pan fry for about a min in the leftover oil. I promise you will be soooo surprised how much flavor and how easy this is. 


Now i better get off this couch before the clock stikes 8!!!! LOL 

Lets talk Juice!

Juicing, Fasting, Juice Detox, Juice Cleanse, all the same..... Its juice! Sweet nutritious juice! Not all juices are created equal, not all fruits are created equal, especially because so many of us have dietary needs and restrictions. But juicing is a great, i repeat GREAT way to cleanse your body and even shed some weight! When you tell someone your juicing the looks are hilarious,  and even some are super interested in knowing how and why. Juicing has to be customized for each person, i myself looovvveee food so doing 2 weeks of juicing with no food is 110% off the table for me, so i customized it, i would have a juice meal for breakfast and lunch and a healthy dinner! And it has never been easier. I even made a mango "ice cream" to help kick the cravings. Overall this method has worked tremendous for me and my husband, he is actually still going, and i lost 10 lbs in just a week and half! Juicing though has a down side, 1. Your senses will be hightened, i could smell the persons lunch in the building next door lol 2. You will be tired, very very tired. But i had coffee, i know bad bad me 3. The first 2 days will suck, suck suck suck, so i would suggest starting on a sat. Please do all the research you can if you have any type of medication needs or restrictions. Knowledge is key!   


But enough of that! Here are my favorite juices, some i made up, but the strawberry, blueberry, apple & green juice is from fitlife.tv its a great website with some more awesome tips and recipes. 



Here is my hubbys favorite because he is wierd LOL 

6 Carrots
Apple  ( i use 2 apple because ick carrots) 


 This is myyyyyy favorite, ooh la la 
You would think it would be a high citris taste but its not, its perfection! LOL 
Also your stomach is hard on heavy citris i would suggest adding 1/2 inch of ginger root to help ease the stomach. (For any juice) 

1/2 a pinapple
1 Texas Grapefruit

A handful of Blueberries
2 Apples




Ahhhh the green juice, now this is a green juice i can  actually drink!

So this was not my first rodeo with the bull called juice! (LOL) we have done this a few times over the past year, our first attempt we failed, the first day, and the 2nd, and 3rd. But when we customized it to our wants and needs it was sooo easy! Now we make our juices for breakfast and lunch the night before because we are sooo tired LOL we have a Breville Juicer, we splurged, but after tons of runs, its great, but any juicer would work great! Before i forget here is the mango "ice cream" !!! Enjoy!

I bought a bag of organic frozen mangos, only ingredient, mangos. Placed into my food processor for 1 min, scraped the walls of the processor, then another min or two until it has a smooth cream like texture!! We still do this for normal sweet cravings! Thats it! I used half the bag for 2 scoops!

Paleo BreakFast Burger

hoooowwddy , from Texas :)  I have been creating some pretty amazing and pretty awesome dinners for my husband and I and some of my friends thought a blog would help pass the word of health and healing through food. We are "Paleo" dieters but really we are more like, organic, non gmo, sometimes vegan, clean eating, paleo, primal, oh hey a pickle kinda people. The answer to the question everyone ask is Nope! We don't miss the "outside" food, mostly because we are now aware of what's in those foods and cant look at them the same. So I'm happy to share my recipes and ideas with everyone! So my first post is going to be last nights dinner which my husband and I worked together to make sooooooo delicious! I present the Breakfast Burger.








yuuuuummmm.
&& here's what you'll need

Makes 4 Burgers
About 20 Min



1 lb Grass Fed Beef or Ground Beef
4 Eggs (Local, Free Range)
8 Strips Bacon
2 Avocados
Spinach ( a handful per burger )
1 Tomato
4 Fresno Peppers ( or jalapeno or any pepper really....just not bell LOL )


    Burger Seasonings (For each patty)
           1 Tsp Onion Powder
           Generous Sea Salt & Pepper
           Drizzled olive oil ( on the patty )


You cant beat a grilled burger but if its not grilling season yet or you are low on time a large skillet or ribbed pan works great. Also you could add cheese, or a condiment (intense flavor so we didn't feel it needed one)


Prep all of you veggies, and bacon then cook your burger to your desired rare-ity (word?)
we made these in a pan so after the patty is done we cooked our eggs in the left over oil, sweet delicious healthy oil (gasp) and once those were complete I sliced the Fresno Pepper down the center I cooked a little with the oil that was left over in the pan.
then stack it up!!!
ill be honest and say it took us mmmaaybbbbeee 20 min to make all together. But if you want to season your burgers in the afternoon or even morning then cook at night that would intensify the flavor to beyond ammmazing.
