Paleo Spaghetti

So I grew up around the love to cook, and the love of food. My dad has to be hands down the greatest cook! Never disappoints! And as a kid, i spent a lot of time with my Nanny, she is THE Martha Stewart of the South, she uses real food for everything! "If you cant pronounce it, you shouldn't eat it" is what she always says. And we use to make EVERYTHING from scratch. Pizza, Pasta Noodles, Sauces, the works. So everytime i make anything it always reminds of those days, standing on a step stool, covered in flour. 

So Italian is also a fav, spaghetti is of course top of the list, so being paleo grain noodles are a no-go. But Spaghetti squash is an amazing alternative, and super easy!! This recipe is basically how i cook the squash and the meatballs.....yumm! And the sauce i bought, its a non-gmo locally made sauce i got from our health food store and its pretty good, lots of flavor! 


 

You can hardly tell the difference right!? 


Makes : 4 Servings 

Time :  1 hour

Ingredients : 

1 Spaghetti Squash 
1 lb Grass Fed Ground Beef, or Ground        Beef
1 Jar of Spaghetti Sauce of choice 

(For the Meatballs) 
1 TBS Onion Powder 
1 TBS Garlic Powder 
1 Tsp Turmeric
1 Tsp Basil leaves 
1/2 Tsp Ground Cumin  
Good amounts of Salt and Pepper
1 Jalapeno Pepper (optional) 
1/2 Tsp Melted Butter ( For later) 


So first set your oven to 400' 

And cut your Spaghetti Squash vertical down the center. And place each halves face down on a baking sheet, and bake for 30-35 min.  

While your wating prep your meatballs. 
In a large bowl i combined the beef, with all ingredients and just mushed all together real good, mixing them well. Then i took another baking sheet and rolled 14 meatballs onto the tray, then i took my melted butter and a small spoon, and added 2 drops of butter to each meatball. Then placed covered in the fridge. 

Once the squash was done, i placed the oven temp down to 350' then add meatballs and cook for 30 min. 

Now take a large bowl, your spaghetti quash and a fork, rake the squash from top to bottom and you will see how the noddles are just made by themselves. After i cleaned out both shells i placed the "noodles" in a bowl in the microwave just to keep warm. 

Now i bring my sauce to simmer while im waiting for the meatballs to be done, and then make a plate!
